Tinolang Manok

Ingredients:   3 lbs chicken, cut to pieces
                    2  tsp Cooking Oil
                    2 tsp Ginger, strips
                    Garlic Crushed
                    1 medium Onion, sliced
                    2 TBSP Patis
                    1 tsp Salt
                    5 Cups Water
                    2 cups pared sliced unripe Papaya
                    1/2 lb Spinach, washed.

Procedure:   1.   In a pot, heat oil.  Saute ginger, garlic and onion for
                         1 minute.  Add chicken and saute until chicken colors
                         slightly.  Season with patis and salt.
                   2.   Add water, lower heat and simmer for 30 minutes or
                         until chicken is tender.
                   3.   Add papaya, cook for 5 minutes or until papaya is
                         tender.
                   4.   Add spinach, cover and remove from heat.  Let stand 5
                         minutes.
