Beef Tacos

Ingredients:   1 pkg McCormick Taco Seasoning Mix
                    1 lb Ground Beef
                    3/4 cup Water
                    12 Taco Shells or Flour Tortilla (6 inch)
                    Shredded lettuce
                    Chopped Tomatoes
                    Shredded Cheese
                    Pico De Gallo
                    Sour Cream

Procedure:   1.   Brown meat in a skillet on medium high.  Drain oil.
                   2.    Stir in Taco Seasoning Mix and water.
                   3.   Bring to boil, Reduce heat and simmer for 5 minutes.
                         Stirring occasionally.
                   4.   Spoon  meat into warm taco shells.
                   5.  Top with lettuce, tomatoes cheese, Pico De Gallo and
                        Sour Cream.

Chicken again!

Easy Teriyaki Chicken

Ingredients:  8 Chicken pieces
                   1/2 cup  Kikkoman Teriyaki Baste and Glazed (Honey and Pineapple)
                    Crushed Garlic
                    1/2 cup water

Procedure:   1.   Combine all ingredients in a pot and boil.
                   2.    Simmer for 30 minutes, and flip for another 30 minutes.
                   3.    Remove chicken, let sauce cook till reduces or thickens.
                   4.    Grill chicken. Place chicken in a serving plate.
                   5.    Pour Sauce over Chicken

Chicken Wings Delight

Ingredients:   1/2 cup Soy Sauce
                    1/4 cup Sherry
                    Crushed Garlic
                    43 lbs Chicken Wings
                    3 TBSP Brown Sugar
                    1/2 cup Lemon juice

Procedure:   1.   Mix soy sauce, sherry, brown sugar, garlic and lemon juice
                         in a large mixing bowl thoroughly.
                   2.   Marinate overnight.
                   3.   Bake at 350 degrees F for one hour or until done.

Arroz a la Cubana

Ingredients:   1 1/2 lb Ground Beef
                    Garlic, crushed
                    Onion, chopped
                    Tomato, chopped
                    1 small box of Raisin
                    1/4 can of Tomato Paste
                    2 Potatoes, cubed
                    Salt and Pepper to taste
                    6 Eggs, fried sunny side up
                    8 Saba or plantain Bananas, each slice diagonally into 3, fried
                    Steamed Rice

Procedure:   1.   Heat pan with oil. Fry potatoes until edges turn brown.  Remove with
                         a slotted spoon and drain on paper towel.
                   2.   Pour off the oil from pan.  Add in beef.  Cover on high heat until meat
                         is no longer pink.
                   3.   Add garlic, onions, tomatoes and raisins. Cook stirring until it starts to
                        soften.
                   4.   Add tomato paste, salt and pepper.  Blend well. Cook for a minute,
                         then put in potatoes.  Cook until potatoes are soft. Stir constantly.
                   5.   Serve with rice, an egg and saba on the side

Ingredients:   .5 kg Shrimps
                    1 cup Sprite
                    Garlic, crushed
                    Cooking Oil

Procedure:   1.   Boil shrimps in Sprite until color turns orange.  Set Aside
                   2.   Saute garlic in oil.
                   3.   Add boiled shrimps.
                   4.   Stir and simmer.

Ginisang Sardinas

Ingredients:   4 cans of Rose Bowl Sardines, separate sauce
                    1 medium red Onion, chopped
                    Garlic, crushed
                    1 ripe Tomato, chopped
                    Lemon
                    1 TBSP Fish Sauce
                    1/2 tsp Black Pepper
                    2 TBSP Cooking Oil

Procedure:   1.   Heat oil in a pan.  Saute garlic and onion.  Cook until translucent.               
                   2.   Add tomato, cook for 3 minutes.
                   3.   Pour Sardine Sauce, Let it boil, then add in the sardines.  Cook for
                         5 minutes in medium heat.
                   4.   Squeeze in lemon juice, season with Fish sauce and black pepper.
                         Cook for another minute or two.
                   5.   Transfer to a serving bowl.  Serve with Steamed Rice.

Ingredients:   3 lbs Pork, cubed
                    Crushed Garlic
                    1/2 cup Soysauce
                    1/2 cup sugar
                    12 Eggs, boiled, then remove shell
                    Water

Procedure:   1.   Saute garlic, sugar and soysauce.
                    2.  Add in pork, mix well and let it cook.
                    3.  Add in water (Leveled to meat) Let it boil.
                         Simmer for 1 1/2 hour.
                    4.  When meat is tender, add in eggs.
                    5.   Cook until sauce thickens.

Garlic Fried Chicken

Ingredients:   1 1/2 lb chicken, serving pieces
                    1/2 cup Panko Bread Crumbs
                    1 tsp Black Pepper
                    1/2 cup Milk
                    1 1/2 TBSP Garlic Powder
                    1 tsp salt
                    3/4 cup flour
                    1 egg
                    1/2 tsp Paprika
                    3 cups Cooking Oil


Procedure:   1.   Combine all dry ingredients in a mixing bowl.  Mix well,
                          set aside.
                   2.   Combine egg and milk in another bowl and whisk.
                         Set aside.
                   3.   Dip chicken in the egg mixture then roll in the dry
                         mixture.  All sides should be evenly coated.
                   4.   Heat oil in a deep cooking pot.  Deep fry chicken until
                         cooked or golden brown in color.
                   5.   Remove chicken, Let oil drip.
                   6.   Transfer to a serving dish.

Beef with Broccoli

Ingredients:   1 lb Beef Sirloin, thinly sliced
                    1 cup Broccoli, chopped Frozen or Fresh
                    2 TBSP Cornstarch
                    2 1/2 TBSP Oyster Sauce
                    1/2 tsp Black Pepper
                    1/4 tsp Salt
                    3 TBSP Cooking Oil

Procedure:   1.   Sprinkle beef with salt and pepper.  Add oyster sauce.
                         Mix well.  Marinate for 15 minutes.
                   2.   Add cornstarch to beef, mix well.
                   3.   Heat oil in a pan, stir fry beef, until both sides are done.
                   4.   Add Broccoli, cook for 3 minutes.
                   5.  Transfer to a serving plate.

Tuna Pasta Alfredo

Ingredients:   1 lb Bow Tie Pasta - cooked according to package
                    1 cup frozen Green Peas
                    2 (6-ounce) cans of Albacore Tuna, drained

                    Alfredo Sauce:   1/4 cup Butter
                                             1 TBSP Olive Oil
                                             1 tsp Garlic, minced
                                             2 1/2 cup Heavy Cream
                                             1/4 tsp ground Black Pepper
                                             1/2 cup Parmesan Cheese
                                             1/4 cup Cream Cheese

Procedure:   1.   Heat cooking pot, Melt butter.  Add olive oil.
                    2.   Saute garlic.
                    3.   Pour Heavy Cream, add black pepper.  Let it boil for
                          5 minutes, stirring.
                    4.   Add cream cheese and parmesan cheese.  Continue
                          stirring until everything is incorporated.
                    5.   Put in green Peas and tuna.  Cook for 5 minutes.
                    6.   Arrange cooked pasta in a serving plate. Top with
                          Tuna Alfredo Sauce.

Chicken Tocino and Ginisang Kangkong sa Bawang

Chicken Tocino

Ingredients:   2 lbs chicken Breast Fillet
                    1 pack of Mama Sita Marinade Tocino Mix
                     Cooking Oil

Procedure:   1.   Marinate Chicken in Tocino Mix for  at least 2 hour.
                   2.   Fry, till both sides are cooked.


Ginisang KangKong sa Bawang


Ingredients:   kangkong 2 ".  Separate stalk from leaf portion.
                    3 TBSP Cooking Oil
                    8 TBSP Chopped Garlic
                    Patis

Procedure:   1.     Pour cooking oil into a frying pan, medium heat.
                    2.    Add 6 TBSP Garlic and cook until nicely brown.  Scoop out Garlic.
                   3.     Reheat remaining oil, even if reduced.  Add 2 TBSP Garlic until fragrant.
                   4.     Add the kangkong stalk, season with patis. Cook 3 minutes.
                   5.     Add leafy portion, season a bit more patis.  Cook until leaves wilt.
                   6.     Transfer sauteed kangkong to a plate and sprinkle garlic bits on top.
                           
             

Fried Pork Chop and Garlic Broccoli

Fried Pork Chop

Ingredients:   Pork, cut to an inch
                    Salt
                    Cooking Oil

Procedure:   1.   Rub salt on pork, let it sit for at least 30 minutes.
                   2.   Fry, till golden brown on both sides.



Garlic Broccoli

First Ingredients:   450 g Broccoli, florets
                            1 cup warm Water
                            1 TBSP Garlic
                            2 tsp Cornstarch
                            1/2 tsp Chicken Broth
                            2 TBSP Olive Oil
                            1/2 tsp Salt

Second Ingredients (Garlic Topping):   1 cup crushed garlic
                                                           2 TBSP Sesame Oil
                                                           3 TBSP Olive Oil
                                                           1 tsp salt
                 
Procedure (Garlic Topping):  1.    Mix evenly ingredients.
                                            2.    Heat a sauce pan and roast the mixture until golden
                                                   brown and crunchy.
                           

Procedure:   1.   Heat oil in a wok.
                   2.   Add garlic stir until golden
                   3.   Add warm water and salt, bring to a boil.
                   4.   Add Broccoli and cook with lid for 8 minutes or until done.
                   5.   Dissolve cornstarch in 1/4 cup water and add to broccoli.
                   6.   Mix well.  Serve in a platter and sprinkle Garlic Topping.

Easy Spaghetti and Garlic Bread

Since I'm not feeling well...my son volunteered to cook dinner.  I was shocked, and proud of him because he stepped in knowing the mother's been sick for days.

Easy Spaghetti

Ingredients:  2 lbs Ground Beef
                   1 lb Spaghetti Noodles
                   1/2 cup butter
                   Garlic, minced
                   Onion, chopped
                   Salt
                   Pepper
                   2 Beef Cubes
                   2 Bottles of  Spaghetti Sauce
                   3 TBSP Sugar
                   I cup grated Cheddar Cheese

Procedure:   1.   Cook noodles according to package.
                   2.   Saute garlic and onion in butter.  When onion is translucent, add
                         Beef cubes.
                   3.   Add in Beef, season with salt and pepper. Cook till meat turns brown.
                   4.   Pour Spaghetti Sauce.  Add sugar.  Let it boil then simmer till
                         sauce reduces.
                  5.   When ready, mix sauce to noodles thoroughly.
                  6.   Top with Cheddar Cheese
                  7.   Eat with Garlic Bread


Garlic Bread

Ingredients:   French Bread, cut in half
                    Butter
                    Garlic, crushed
                    Salt
                    Pepper

Procedure:   1.   Cream butter.
                   2.   Add garlic and season with salt and pepper
                   3.   Spread Garlic Butter on both sides of Bread.
                   4.   Broil bread for 5-8 minutes or until bread gets toasted.

Fried Spada

Ingredients:   Spada, cut to pieces (seafood City, fish section)
                    Salt
                    Cooking Oil

Procedure:   1.   Clean fish, make 2 slits with a knife on both sides.
                   2.    Rub salt on fish, both sides.
                   3.    Fry Both sides until golden brown.



Adobong Sitaw


Ingredients:   1.10 lbs  Long Beans, cut 2 ''
                    250 g Pork Belly, diced
                    2 TBSP Garlic, minced
                    3 TBSP Soy sauce
                    3 TBSP Oyster Sauce
                    1 piece Lemon Juice
                    1/4 tsp Black Pepper
                    1 TBSP Cooking oil

Procedure:   1.   Season pork with pepper and soy sauce.
                   2.   Heat oil in a large non-stick pan, saute garlic.
                   3.   Add pork and cook on high, until golden brown.
                   4.   Add long beans, oyster sauce, lemon juice and cook.
                   5.   Stirring often for 15 minutes.

Aligui Pasta

Ingredients:   1/4 cup + 2 TBSP Butter
                    2 TBSP Garlic, minced
                    1 cup Aligue
                    juice from 1/2 Lemon
                    Pepper to taste
                    300 gr spaghetti noodles, cooked accdg to package
     
                    *100grams pasta, 1/4 cup Aligue

Procedure:   1.   Saute garlic in melted butter.
                   2.   Add aligue and cook for about 5 minutes.
                   3.   Stir in lemon juice and season with pepper.
                   4.  Cook for about 1 minute.
                   5.   Top aligue on noodles, serve warm.

Breaded Beef Steak


Ingredients:   125 g. Beef Steak
                    Juice of a lemon 
                    Salt and Pepper
                    1 egg, beaten
                    Breadcrumbs
                    cooking Oil 

Procedure:   1.   Marinate beef slices in lemon, salt, pepper and
                         beaten egg for 30 minutes in the refrigerator.
                   2.   Roll in breadcrumbs then fry in hot oil.
                   3.   Serve with ketchup .

Baked Fish Au Gratin

Ingredients:   1 TBSP Lemon Juice
                     1/4 cup Butter, melted
                     3.3 lbs White Fillet Fish
                     1 tsp Salt
                     1/2 tsp Pepper

Topping:        1/2 cup Japanese Breadcrumbs
                     2 TBSP Garlic, minced
                     1/4 cup Parsley, chopped
                     1/2 cup Mayonnaise
                     1 cup Quick melting Cheese, grated

Procedure:   1.   Preheat oven 350 F.
                   2.   Season fish with lemon juice, salt and pepper.
                   3.   Arrange fish in a oven proof pan.  Pour in melted
                         Butter, set aside.
                   4.   In a bowl, combine breadcrumbs, parsley, mayonnaise and
                         grated cheese.  Spread on top of fish.
                   5.   Bake for 20 minutes or until golden brown.

Pan-Fried Teriyaki Steaks

Pan-Fried Pork Teriyaki Steaks

Ingredients:   5 pcs Pork Steaks, Slices 1 cm Thick
                    1/3 cup Soy Sauce
                    2 TBSP Grated Ginger
                    1/3 cup Brown Sugar
                    2 TBSP Sesame Seeds
                    1/4 cup Butter

Procedure:   1.   In a bowl, combine soy sauce, ginger, brown sugar,
                         and sesame seeds.  Mix well  Add pork and marinate
                         for at least 15 minutes in the refrigerator.
                   2.   In a frying pan, melt 1 TBSP Butter.  Remove pork from
                         marinade and pan fry over moderate heat until done.
                   3.   Do the same with the rest of pork using a TBSP Butter
                         per steak.
                   4.   Serve over rice.

Corned Beef Crisps


Merienda/Snack

Corned Beef Crisp

Ingredients:   1 egg white
                    30 pcs Large Molo Wrapper
                    1/3 cup grated quick melting cheese
                    1/2 cup Chopped Parsley
                    1 - 210 gr can Corned Beef

Procedure:   1.   In a bowl, combine corned beef, parsley and cheese. Mix well.
                   2.    Spoon onto molo wrapper a teaspoon of the mixture. 
                   3.   Moisten edges of the wrapper with egg white then fold one edge
                         over another to seal in filling.
                   4.   Deep Fry until golden brown.
                   
   

Chicken in Sweet Soy-Sesame Sauce

Chicken in Sweet Soy-Sesame Sauce

Ingredients: 2.5 lbs chicken cut up
                  1/2 cup Soy Sauce
                  1/2 cup Brown Sugar
                  1/4 cup Worcestershire Sauce
                  1 TBSP Minced Garlic
                  1/4 tsp Pepper
                  1 cup Water
                  1/2 cup sliced Onion Leeks
                  3 TBSP Cornstarch dissolved in
                  3 TBSP Water
                  3 TBSP Toasted Sesame Seeds

Procedure:   1.   In a sauce pan, combine chicken, soy sauce, brown sugar,Worcestershire
                          sauce, garlic, pepper and water.
                   2.   Allow to boil and let simmer until chicken becomes tender.
                   3.   Add onion leeks, mix well.
                   4.   Add cornstarch mixture.  Cook until sauce thickens.
                   5.   Add sesame seeds.  Mix well and serve hot.

Steamed Crabs

Ingredients:   Blue Crabs
                    Salt

Procedure:  1.   Clean Crabs.
                   2.   Get a wok with a cover, place crabs and sprinkle some
                         sea salt or rock salt. Cover (NO need of water).
                   3.   Let it cook until Crabs turn red in color.
                  4.   Dip crabs in Lemon butter or Garlic Vinegar.

Lechon Kawali

Lechon Kawali

Ingredients:  Whole Liempo
                   Salt
                   Water
                   Lechon Sauce (Mang Tomas) 
                   Turbo Oven

Procedure:   1.   Boil Liempo in salt till tender - drain and cool.
                   2.   turbo should have a rack, place Liempo. Cover 
                         Bake at 350F  for 1 1/2 hours (Turning it once).
                   3.  Raise temp to 400F and cook another 15-20 minutes
                        until skin turns golden brown.
                  4.   Cut into serving pieces and serve with Lechon Sauce.  

Kare-Kare

Missed some days, just got back yesterday from a short vacation.

My sister-in-law requested this dish...

Kare-Kare

Ingredients:  2 lbs Oxtail, cut into pieces
                   Minced Garlic
                   Chopped Onion
                   1 1/2  cup sliced Eggplant
                   1 1/2 cup Long Beans, cut into 2'' lengths
                   1 cup Chinese Cabbage, sliced
                   3/4 cup Peanut Butter
                   1 pack Pamana Pang Kare Kare

Procedure:   1.   Boil oxtail in 5 cups water until meat is tender in medium heat.
                   2.   Once meat is tender,
                         Prepare the peanut sauce: In a bowl, get 1 cup of broth from
                         boiled oxtail.
                         Stir in 1 package of Pamana  Kare-Kare Mix and 3/4 cup
                         Peanut Butter, mix well.
                   3.   In a pot, saute garlic, onion in oil.  Add oxtail, stir fry.  Pour
                         in peanut sauce.  Add in remaining Broth.  Mix well.  Let
                         it cook for at least 5 minutes.
                   4.   Add eggplant and Long Beans and cook for 2 minutes.
                   5.   Last, add in Chinese Cabbage, let it simmer for 2-3 minutes
                         until vegetables are done.
                   6.   Serve hot with Bagoong and rice.

Binagoongang Baboy

Ingredients:  1 1/2 lbs Pork Shoulder or Butt cut into 2 '' cubes
                   2 TBSP Cooking Oil
                   2 cloves Garlic, minced
                   1 medium Onion, sliced
                   1 medium Tomato, chopped
                   3/4 cup Water
                   1/2 tsp Sugar
                   4 TBSP Bagoong


Procedure:   1.   Saute garlic, onions and tomatoes in hot oil.  Add pork
                         and saute until pork is no longer pink.
                   2.   Add water, cover and cook for about 45 minutes.  Add
                         bagoong and sugar and continue cooking for another 15
                         minutes or until pork is tender, stirring occasionally over
                         low heat.
