Tonkatsu and Gulay na Cabbage

        June 30, 2012:  Saturday Dinner


Tonkatsu

Ingredients:  Pork chops, boneless
                     1 cup Flour
                     1 Cup Panko Bread Mix
                     Salt and Pepper to taste
                     1 Beaten Egg
                     Cooking oil for frying

Procedure:   1.  Make sure pork is really thin.
                    2.  Season Pork with salt and Pepper, Let it sit for 15 minutes.
                    3.  Coat Pork with flour.
                    4.  Dip in the beaten egg.
                    5.  Coat with Panko Bread Mix.
                    6.  Deep Fry until it's golden brown.


Gulay na Cabbage


Ingredients:  Pork strips
                     Shrimps, peeled and deveined
                     Crushed garlic
                     1  Chopped Onion
                     2 Chopped Tomatoes
                     Black Pepper
                     Shrimp Cube
                     Patis, if you need more flavor
                     Cabbage, cut like shreds

Procedure:    1.  Saute garlic, onion, tomatoes and Shrimp Cube.
                     2.  Add pork and shrimps, season with black pepper. Let it cook.
                     3.  See if you need to put patis for more flavor. Let it cook 5 minutes.
                     4.  Add in cabbage cover and simmer until cabbage is cooked.

Beef Pares

June 29, 2012: Friday Dinner

Beef Pares


Ingredients:  1 lb beef brisket, uncut
                     1/4 cup soy sauce
                     1 tsp black pepper
                     1/4 cup sugar
                     2 TBSP Ginger, minced
                     Crushed garlic
                     Onion , minced
                     4 cups water
                     1 piece beef cube
                     2 piece star anise
                     3 TBSP Green onions, finely chopped

Procedure:    1.  Pour water in a pot and  bring to boil. Add beef cube and beef.
                     2.  Boil until meat is tender (1-2 hours) When tender, remove from pot.
                          Let meat cool down.  Do not throw away stock.
                     3.  Slice beef to cube, set aside.
                     4.  In a pan, saute garlic, ginger and onions.  Add meat. Cook for 2-3 minutes.
                     5.  Add soysauce, black pepper, sugar and 1 cup beef stock (used from beef).
                     6.  Bring to boil.  Add in Star Anise and simmer for 10-15 minutes or until
                          the sauce thickens.
                     7.  Garnish with Green Onions.

Home-Made Tapa and Tortang Talong

June 28, 2012: Thursday Dinner:

Tapa

Ingredients:  3 TBSP Sugar
                     1 tsp Salt
                     Finely sliced Beef

Procedure:  1.  Combine Sugar and salt, mix well.
                   2.  Rub both sides with Sugar and salt mixture.
                   3.  Let it sit at least an hour, better overnight.
                   4.  Fry.



Tortang Talong

Ingredients:  3 Eggplants
                     3 Beaten Eggs
                     2 TBSP Chopped Onions
                     2 tsp minced garlic
                     Ground Pepper to taste
                     Fish Sauce to taste
                     1/2 lb ground pork
                     1 TBSP Butter
                     2 TBSP Cooking Oil

Procedure:  1.  Boil eggplants until soft but not over cooked.
                   2.  In another pan, melt butter.
                   3.  Saute garlic and onions.  Add in pork, let it cook.
                   4.  Season with fish sauce and pepper.
                   5.  Simmer for about 15 minutes on low heat.
                   6.  Strain the juice out of the pork.  Set aside.
                   7.  Peel eggplants.  Mash with a fork.
                   8.  Mix the eggplants and pork with the beaten eggs.
                   9.  Heat some oil in a skillet.  Put some of the mixture on the skillet,
                        Let it brown on both sides.
                 10.  Serve with rice and ketchup.

Braised Pork Ribs

July 26, 2012: Tuesday Dinner

Braised Pork Ribs

Ingredients:  1.5 k Pork Spareribs
                     250 ml  Orange Juice
                     150 ml Water
                     5 TBSP Oyster Sauce
                     Minced Garlic
                     Sliced Green Onions
                     Ground Pepper
                    

Procedure:  1.  Saute garlic, add in the ribs, orange juice, water, oyster sauce,
                        ground pepper.  Simmer until sauce thickens and meat is tender.
                   2.  Place in a serving dish and sprinkle some green onions and serve.

Sinigang na Hipon

June 25, 2012: Monday Dinner

Sinigang na Hipon

Ingredients:  Shrimps
                     Water or Hugas bigas
                     Chopped Tomato
                     Chopped Onion
                     Sinigang Mix
                     Fish Suce
                     Spinach or Kangkong

Procedure:  1.  Boil all ingredients except vegetables and shrimps.
                   2.  When boiled add in vegetables after 5 minutes ass in shrimps.
                   3.  Cooked when shrimps turn pink.

Bulalo

Sunday Dinner:  Bulalo

Ingredients:  2 lbs Beef Shank
                     1/2 cabbage, individually detached
                     1 small bundle Pechay
                     3 pc corn, cut into 3 parts
                     2 beef cube
                     2 TBSP Peppercorn
                     1/2 cup green onions
                     1 onion
                     34 ounce water
                     2 TBSP Fish Sauce

Procedure:    1.  In a big cooking pot, pour in water and beef cube and bring to boil.
                     2.  Put in beef shank followed by the onion and whole peppercorn.
                     3.  Boil and simmer for 1.5 hours or until meat is tender.
                     4.  Add the corn and simmer for another 10 minutes.
                     5.  Add fish sauce, cabbage, pechay and green onion Simmer for another 5 minutes.
                     6.  Serve hot.

Pork Giniling

I found this recipe online and I was surprised my hubby liked this dish...

Pork Giniling

Ingredients:  1 1/2 Ground Pork
                     1 1/2 cup Potatoes, cubed
                     8 ounce Tomato sauce
                     Crushed Garlic
                     1 onion, minced
                     1 tsp sugar
                     1 pc pork cube
                     4 eggs
                     Salt
                     Pepper
                     Cooking oil
                     1 cup water

Procedure:    1.  Boil eggs, peel and set aside.
                     2.  Saute garlic and onions.
                     3.  Add in ground pork, cook 5 minutes.
                     4.  Add pork cube, tomato sauce, water and let it boil, then simmer.
                     5.  Put in potatoes, stir until every ingredients are properly
                          distributed, Simmer 15 minutes.
                     6.  Add salt, pepper and sugar.
                     7.  Put in eggs and turn of heat.

Arroz Caldo

It was a good day for Arroz Caldo yesterday.  Weather wise, just perfect.

Arroz Caldo

Ingredients:  Chicken Bone with meat,  Boiled with little salt
                     1 cup rice + 1/2 cup malagkit, washed.
                     1 liter of chicken stock (34 ounce)
                     2 TBSP Fish Sauce
                     Crushed Garlic
                     1 onion, minced
                     1 knob ginger, julienned
                     Black pepper
                     1 Chicken broth cube
                     1 cup scallion (green onions) minced
                     2 TBSP Safflower
                     Lemon
                     Crushed garlic, toasted


Procedure:   1.  Shred all chicken meat off the bone, set aside.
                    2.  Reserve the chicken stock
                    3.  Saute garlic, onion, ginger, chicken cube.
                    4.  Add in Shredded chicken, season with fish sauce and pepper. Let it cook.
                    5.  Pour in the rice, mix well.
                    6.  Pour in the Reserve chicken stock and bring to boil.
                    7.  Add Safflower for additional color and aroma.
                    8.  Stir occasionally and simmer until the rice is cooked.
                    9.  Serve hot with toasted garlic, minced scallion, little fish sauce and a
                        Squeezed lemon

Pita Pepperoni Pizza

Mom, whats for dinner?  I hear this everyday from my son.  My daughter would care less, she hardly eats.
I was so lazy to cook today, maybe because of the heat. I spent the afternoon watching the kids, including  hubby go swimming today, It was soooo hot out there. 
I had a bad headache and needed to come up with something quick and easy for dinner. Well, I found this recipe online.

Pita Pepperoni Pizza

Ingredients:  Pita Bread
                   Pepperoni
                   Pizza sauce
                   Mozzarella Cheese, grated


Procedure:  1.  Cut pita bread into two pieces.
                  2.  Open face, Smear Pizza Sauce.
                  3.  Sprinkle Cheese over it.
                  4.  Scatter pepperoni.
                  5.  Top off with bit more cheese.
                  6.  Bake in a pre-heated 500 F oven for 5 minutes.

Ampalaya (Bittermelon) with Egg

Ampalaya with Egg


Ingredients:  Bitter Melon, sliced
                   Crushed Garlic
                   Chopped Onion
                   Chopped tomato
                   Shrimps, peeled and deveined
                   2 beaten eggs
                   Salt and pepper to taste
                 

Procedure:  1.  Place Bitter Melon in a bowl, sprinkle some rock or sea salt, squeeze out some bitter juice.
                       Rinse and squeeze, set Aside.
                  2.  Saute garlic, onion and tomato.
                  3.  Add in the shrimps, season with salt and pepper if needed and cook for 3 minutes.
                  4.  Add in Bitter Melon.  Let it cook till Bitter melon is ready.
                  5.  Pour egg, cook till sets like scrambled.

Bitter Melon with Miso

Ingredients:  Bitter Melon, sliced
                   Crushed Garlic
                   Chopped Onion
                   Chopped tomato
                   Shrimps, peeled and deveined
                   Miso (You can find this at the Asian Store, Frozen Section)
               

Procedure:  1.  Place Bitter Melon in a bowl, sprinkle some rock or sea salt, squeeze out some bitter juice.
                       Rinse and squeeze, set Aside.
                  2.  Saute garlic, onion and tomato.
                  3.  Add in the shrimps and cook for 3 minutes.
                  4.  Add in 1/2 Miso,  Let it cook for 5 minutes.
                  5.  Add in Bitter Melon
                  6. Cook till Bitter melon is ready.

Sauteed Corn

Here is the recipe of the Sauteed Corn we had  together with the fried Bangus.

Sauteed Corn:

Ingredients:  3 white Corn,
                   Crushed garlic
                   1 small onion, chopped
                   1 tomato, chopped
                   Shrrimps, peeled and deveined, cut to pieces
                   Shrimp Cube
                   Black Pepper
                   Patis

Procedure:  1.  Scrape of Corn Kernel off the cob, set aside.
                  2.  Saute, garlic, onions and tomato.  Add in shrimp Broth.
                  3.  Put in Corn, let it cook, season with black pepper. Let it cook for 3 minutes.
                  4.  Add in Shrimps.
                  5.  If you think its dry, you can add water about 1/2 cup.  Let it cook.
                  6.  Add Patis if you need more flavor.
                  7.  let it boil, then simmer till corn gets cooked.
               

Fried Bangus (Milkfish)

We had Fried Bangus for dinner and Sauteed Corn.

Fried Bangus

Ingredients:  Bangus, bought  at the Asian Store (Frozen Section) Pre-cut
                   Crushed garlic
                   Vinegar
                   Patis or Fish sauce

Procedure:  1.  Combine in a bowl, garlic, vinegar and fish Sauce.
                  2.  Add in Fish, let it marinate for at least 30 minutes.
                  3.  Fry till brown on  both sides

Here is the recipe of the Pico de Gallo

Pico De Gallo


Ingredients:  2 Tomatoes, Boiled, when soft remove skin, chopped
                   1 small onion, chopped
                   1 lime, squeezed
                   Salt and Pepper, to season
                   Cilantro, chopped

Procedure  1.  Combine all in ingredients in a bowl. Mix well.
                  2.  You can have this with Burrito and tortilla chips
               

Adobo Burrito Part 1

I didn't want to waste my adobo and decided to make it into a Burrito.

Adobo Burrito

Ingredients:  Leftover Adobo, Shred
                   Cooked rice
                   Sour Cream
                   Flour Tortilla
                   Scrambled Egg
                   Pico de Gallo ( I made from Scratch) See Part 2 for recipe
                 
Procedure:  1.  Put tortilla in a plate, microwave for 30 sec.
                  2.  Put Rice, Adobo, Scrambled Egg,  Pico de Gallo and sour cream/
                  3.  Wrap like Burrito.



Shrimp Curry

My husband loved it and took the rest for his lunch at work...

Shrimp Curry

Ingredients:  2 lbs Shrimps, peeled and deveined
                   1 small onion, chopped
                   garlic crushed
                   1/2 TBSP + 1 TBSP Curry Powder
                   Cooking Oil
                   1 can Coconut Milk
                   salt

Procedure:  1.  Marinate shrimps with 1/2 TBSP Curry Powder.  Set aside.
                  2.  Saute garlic and onions in oil.
                  3.  Add in 1 TBSP Curry powder.
                  4.  Pour in Coconut Milk, season with salt.  Let it cook till sauce thickens.
                  5.  Add in the shrimps. Cook till shrimps turn pink.

Pork Spareribs with chicken Broth

We had spareribs and Shrimp Curry for dinner last night. The Ribs recipe was given to me by my Cousin's wife, very easy.

Ingredients:  Pork Ribs, cleaned and pat dried.
                   Black Pepper
                   Chicken Broth Powder

Procedure: 1.  Rub ribs all over with Black Pepper and Chicken Broth powder.
                 2.  Place in a baking pan, seal with foil.
                 3.  Bake at 400 F for 1 1/2 hours.
                 4.  Uncover and broil till top browns or over the grill.

Mustard Steak

We celebrated my nephew's birthday at my place.  We had mostly grilled stuff.  One of the highlights of the evening was the Mustard Steak. This recipe was given to us by my brother from Arizona.

MUSTARD STEAK

Ingredients:  Trip Tip Roast Steak
                    Olive Oil
                   Montreal Seasoning
                   Granulated Garlic
                   Pepper
                   French Mustard
                   Knorr Seasoning

Procedure:  1.  Massage meat with oilve oil, knorr seasoning and mustard.
                  2.  Add Montreal and the other dry seasoning.
                  3.  Add another layer of mustard.
                  4.  Grill.

Pork Adobo

My kids requested for Adobo today.

Pork Adobo

Ingredients:  4 lbs Pork Shoulder, cubed
                   1/2 cup vinegar
                   1/2 cup soy sauce
                   1/2 cup water
                   crushed garlic
                   black pepper

Procedure:  1.  In a pot, combine all ingredients.  let it boil then simmer.
                  2.  When liquid (Sauce) is reduced and you think the meat is tender, Remove meat.
                  3.  Get a pan, and fry meat.
                  4.  In the pot continue cooking the liquid (sauce) until half is left.
                  5.  When meat is all fried, place in a platter and pour liquid (Sauce) over.

Hotdog, chips

For dinner, we are just having grilled hotdogs in a bun and potato chips.  I don't have time to cook because my daughter is seeing her eye doctor later this afternoon.  She is 10, and likes to wear contacts, we will see what the doctor says.

Hotdog and chips

We prefer Nathans Hotdogs.  My husband will grill the hotdogs and the buns.  Then, add your choice of condiments. Chips on the side, we have Lays Potato Chips.
Simple, but Yummy!


Potato Soup

I Cooked Potato soup last night.  We were supposed to eat it with a sandwich, but the soup itself would really be filling.  True enough, we were full.

My friend from Canada, you should try this recipe....

Potato Soup

Ingredients:  1 med onion, chopped
                   2 large carrots, cubed
                   3 stalks celery, cubed
                   10 small red potatoes, cubed
                   1 lb ham, cubed
                   olive oil
                   1 pint Heavy Whipping Cream
                   2 chicken breast
                   2 TBSP Chicken broth powder
                   Salt and pepper
                   2 TBSP Cornstarch dissolved in
                   6 TBSP Water

Procedure:  Boil chicken, reserve broth, set aside.
                   Shred chicken set aside.
                  1.  Saute vegetables in oil.
                  2.  Add shredded chicken and ham.
                  3.  Season with pepper and chicken broth powder.
                  4.  Add in potatoes, let it cook for 5 minutes.
                  5.  Add broth and if you think you need to add more water.  Liquid should be
                      a little over the meat and vegetables.
                  6.  Boil till potatoes are very tender.
                  7.  When almost done, reduce to simmer and add cream.
                  8. Taste if soup needs more flavor, if so, add 1 TBSP of chicken broth powder.
                  8.  Add cornstarch mixture to thicken soup or creamy.

Chicken Sandwich

I was not in the mood to cook, so I did something different... I didn't serve rice.  We had a simple dinner... it was satisfying... I prepared chicken sandwich, had tossed salad on the side with Bacon Ranch Dressing.  I also made soup, Knorr Chinese Soup, Crab and corn ( add one egg).  I got this at the Asian store.

Chicken Sandwich

1.  Boiled Chicken Breast for 30 minutes.
2.  Remove, when cool, flake chicken.
3.  In bowl, combine chicken Mayonnaise, salt and pepper.
4.  You can add pickle relish.
5.  Optional, if you want a little crunch, you can add chopped celery.
6.  Toast bread.
7.  Make it into a sandwich.

Easy Carbonara

I'm posting this recipe for my friend from Canada, Hello there!!!  Try cooking this for your kids...

Easy Carbonara

Ingredients:
                    Cooked Bacon, crumbled
                    Chopped Onion
                    Chopped Garlic
                    1 can Evaporated Milk
                    Quick Melt Cheese, cubed (use 1/2  of box) if you got the big one.
                    1 TBSP Chicken broth or 1 cube. (you can reduce so it won't be too salty, you can easily add)
                    1 lb spaghetti noodle or any noodles (cook according to package)
                    Butter

Procedure:
                   1.  Saute garlic and onion in butter.
                   2.  Add evaporated milk, cheese and chicken broth.
                   3.  Stir until cheese is melted. Let it cook for another 5 minutes.
                   4.  Mix in noodles.
                   5.  Top with crumbled bacon

Gulay na Sayote

We needed vegetables too......

Gulay na Sayote

Ingredients:
                   Sayote, peeled and cubed
                   Crushed garlic
                   Chopped Onion
                   Chopped Tomato
                   Ginisa Mix or Chicken Broth
                   Black Pepper
                   Fish Sauce
                   Shrimps, deviened
                   Water

Procedure:
                  1.  Saute garlic, onion, tomato and ginisa mix or chicken broth.
                  2.  Add in the shrimps, let it cook.
                  3.  Season with black pepper.
                  4.  Add 1/2 cup water.  Let it cook.
                  5.  If you think you need more flavor, add fish sauce.

Fried Chicken Wings with Sinigang Mix (Tamarind Base)


I learned this recipe from my third brother...

Fried Chicken Wings with Sinigang Mix

1.  Clean chicken and Pat Dry.
2.  Season chicken with sinigang mix and Fish Sauce for an hour.
3.  Deep Fry.

Barbecue Pork

I didn't cook dinner last night, I was very tired the nights before, but all worth it.  We just had left over... we had Barbecue Pork, Fried chicken wings with Sinigang Mix and Gulay na Sayote.

Barbecue Pork

1.  Get any pork slices for barbecue.
2.  Marinate it with Mama Sita Barbecue Marinade and crushed garlic for an hour.
3.  Grill.

Chicken Afritada

My brother is here for a short vacation and requested this dish...

Chicken Afritada

8 Chicken thighs
1/4 soy sauce
1/4 vinegar
black pepper
Crushed Garlic
1 Onion, sliced
Crushed Garlic
1 small can Tomato Sauce
1 Red Bell Pepper, sliced

1.  In a pot, Boil chicken, soy sauce, vinegar, black pepper and garlic for 30 minutes. Set aside marinade.
2.  Heat oil and brown chicken, set aside.
3. Same pan, saute garlic, onions, bell pepper and tomato sauce.
4.  Place in chicken, add in marinade, Boil then simmer.
5.  When chicken is tender and oil comes out, it's ready.


PORK ASADO

I found this recipe online..Tried it... Taste good!

Pork Asado (Mama Sita)

1 whole Pork Shoulder
2 cups water
1/2 cup Mama Sita Barbecue Marinade
2 TBSP Rum
2 TBSP Sugar
2 pc Bay Leaf
2 TBSP Cornstarch dissolved in
6 TBSP Water

Combine pork, water, marinade,rum, sugar,and bay leaves.
Bring to a boil.  Lower heat and simmer until pork is tender.
Remove meat and slice thinly.
Thicken the sauce with the cornstarch mixture.
Pour Sauce over meat.
