White Spaghetti

I got this recipe from a friend, it was my first time to try it.  I bought garlic bread from the grocery to go with the noodles.

White Spaghetti

Ingredients:
                    1 lb Spaghetti Noodles (cook according to package)
                    1 cup butter
                    1 pack honey or sweet ham (cubed)
                    1 can Nestle Cream
                    1 can Cream of Mushroom Soup
                    1/2 cup Parmesan cheese
                    1/2 cup grated Cheddar Cheese

Procedure:
                   1.  Melt butter and saute ham. Let it cook.
                   2.  Add in Cream and Soup.  Let it cook
                   3. Add in Parmesan Cheese. Let it cook again.
                   4.  Turn off the fire.  Mix in Noodles.
                   5.  Top with Cheddar Cheese.

Crab Torta

Ok, I have mentioned earlier, my husband doesn't like Buttered Beef, so I had to cook something else for my hubby....

Crab Torta

Ingredients:
                   2 Canned Crab in water
                   crushed garlic
                   6 beaten eggs
                   salt
                  pepper
                  butter

Procedure:
                  1.  Saute garlic in butter.
                  2.  Add in crab meat, season with salt and pepper. Let it cook for 5 minutes.
                  3.  Pour in beaten eggs, mix well.  Let it cook till egg resembles like scrambled.

Inihaw na Bangus

Chicken alone is not enough for my husband... I needed to cook fish for him...Last week I bought a pack of Boneless Bangus.  Yay! Problem solved!

Inihaw na Bangus

I had my husband prepare this dish, while I was cooking the chicken.

What he did...

1.  Washed the fish, removed excess water.
2.  Marinated fish with soy sauce and lemon. Let it sit for 30 minutes.
3.  Grill both sides until cooked.
4.  In a small bowl combine soy sauce and a little cooking oil.
5.  You can use this as baste, so fish won't be dry.

Crispy Fry Chicken


Today, I spent my morning helping my husband clean the van.  We had fun, talking, telling stories while cleaning.  Then, I realized... what am I going to cook??????  Luckily I found 3 trays of chicken drummettes.
I asked my husband how would he like the chicken cooked....fried...of course!  I checked the pantry and found a pack of Crispy Fry I bought at a Filipino Grocery.  It's easy to prepare....

Crispy Fry Chicken

1.  1 Kilo of chicken pieces - washed and cleaned, remove excess water. Place in a bowl.
2.  1 pack of Crispy Fry - pour over chicken, coat each pieces.
3.  Deep Fry




Ground Pork with Squash

I forgot to post my recipe yesterday.  It was a very stressful day for me...I was waiting by the hour for America Idol...season finale... I kinda new who would win...

Dinner was early and quick.  I sauteed Ground pork with Squash.  I also grilled some sausages (Store Bought) for the kids.

Ground Pork with Squash

1.  Sauteed, crushed garlic, chopped onions and chopped tomatoes.
2. Add 1/4 ground pork, seasoned with patis and pepper.  Let it cook.
3.  Add  diced squash (small size).  Let it cook.
4.  Cover, until squash is ready.

Salmon Patties

My husband always want seafood, he said we eat too much meat. I don't have any fish except a can of salmon in my pantry.  Well, everyone should be happy, Fish for my husband, beef for the rest of the family.

Salmon Patties

1.  Open a can of salmon, drain well.  Set aside 2 TBSP of juice. I usually remove the black stuff and bones.
2.  In a bowl, Flake the fish, add chopped 1/3 cup of onion, 1 egg. Mix until sticky.
3.  Add in 1/2 cup flour.
4.  Combine reserved 2 TBSP juice, and 1 1/2 tsp of baking powder, mix well  Add to fish.  Mix well
5.  Form to patties, then fry both sides till brown.
6.  You can use Sweet Chili Sauce.

Filipino Beef Steak

Today, I decided to cook beef steak.  I wanted something quick, and my mom was hinting for it too.

Beef Steak

1. Marinate Ribeye slices with lemon,soysauce and a little olive oil.  Let it sit for an hour.
2.  Heat the pan (NO OIL), pan fry one at time, brown both sides. Remove from pan, continue the step.
3.  When done, pour remaining marinade in the pan, let it cook for at least a minute.
4.  Pour back beef, mix well with the sauce.
5.  Eat over rice.

Tortang Talong (the lazy style)

Aside from my Roast Chicken, I was in the mood to eat Tortang Talong, but lazy to do the real way, like grilling the eggplant and so on...  I cheated.  I made someting almost close, but tasted as good.

Tortang Talong

1.  Saute garlic in oil, add in 1/4 lb of ground pork, season with salt and pepper. Let it cook.
2.  Add in diced eggplant (one large Filipino eggplant) cook for 3 minutes,
3.  Pour in 3 beaten eggs, let egg set like scramble. 
4.  Cover, till eggplant is cook.

Roast Chicken with Gravy

It's Monday and I know what we are having for dinner............ chicken!  I found some quarter leg chicken in the freezer.  I decided to Roast it and make gravy.


Roast Chicken

1.  Rub chicken with Black Pepper.
2.  Marinate chicken with Soysauce and Lemon, Let it sit for an hour.
3.  Arrange chicken in a pan with a rack so juice and trimmings can drip on the pan for gravy later on.
4.  Bake chicken at 350 F for an hour and flip  for another hour.

Gravy

1.  Remove rack from the pan, add about a cup of water to dilute the trimmings. 
2.  Pour to a pot, add in a can of evaporated milk and 2 tablespoon of cornstarch.
4.  Turn on the heat, cook until sauce thickens.

Shrimp Torta

Luckily I thought of Shrimps.  True enough, my husband didn't touch my chicken dish.  Well, he said he enjoyed my shrimps and that he didnt have a chance to try the chicken.  Yeah right!  Without him knowing, I gave him chicken for his lunch tomorrow at work....

Shrimp Torta

Ingredients:   Butter
                      1/2 cup shrimps, peeled, deveined and sliced in half
                     crushed garlic
                     5 beaten eggs
                     knorr seasoning for flavor


Procedure:  1.  Heat the pan, saute garlic in butter.
                   2.  Add in shrimps and season it with Knorr Seasoning.
                   3.  When Shrimps turn pink, pour in the beaten egg.  Let it cook like scramble.
                   4.  When cooked, pour shrimps over rice.

                   

Chicken Imperial

I love garlic, this dish is baked with a lot of it.  I got this recipe from my cousin way, way back.  I used to go to their place if I don't like the food at home. I had this dish one time and loved the power of the garlic it had. My husband is not a garlic lover as I am. So I need to come up with another dish for dinner later.

Chicken Imperial

Ingredients:  Chicken, deboned and skinless
                     Melted Butter
                     Crushed Garlic
                     Shredded Cheddar Cheese
                     Black Pepper
                     Breadcrumbs
                     Aluminum Foil

Procedure:   1.  Marinate chicken in butter, garlic and pepper.  Let it sit for an hour.
                    2.  In a bowl, Combine 1 cup of breadcrumbs and 1/2 cup cheese.
                    3.  Coat chicken with the breadcrumb mixture.
                    4.  Arrange each chicken in a single layer baking dish.  Top with shredded cheese.
                    5.  Cover with foil.
                    6.  Bake at 350 F for 1 1/2 hour.

Filipino Sweet and Sour Pork

I found this recipe online.  I made it because it was a simple and easy Sweet and Sour Recipe.  Hope you guys will like it. :)

Sweet and Sour Pork

Ingredients:  1 lb Pork Shoulder, cut to bite size
                     1 cup flour
                     3/4 cup water
                     1 egg
                     1 tsp salt (I used chicken broth powder, it gives more taste)

Procedure:    1.  In a bowl combine all ingredients, except pork.  Mix till smooth.
                     2.  Coat pork with mixture.
                     3.  Deep fry, set aside.


For the Sauce:

Ingredients:  1/2 cup sugar
                     1/2 cup Red Vinegar
                     2 TBSP Soysauce
                     1/4 cup water
                     2 tsp cornstarch

Procedure:  1.  Mix all ingredients in a sauce pan.
                   2.  Boil till thicken
                   3.  Pour over pork

Filipino Beef Salpicao

This recipe was given to me by my sister-in-law way, way back.  I really like going for easy recipes.  I don't like complicated ones.  I'm sure once you try this, you'll love it....

Beef Salpicao

Ingredients:  3 lbs Rib Eye, cut to cubes
                     1/4 cup Knorr Seasoning
                     10 cloves crushed garlic
                     Olive Oil

Procedure:  1.  Marinate beef with Knorr Seasoning for 30 minutes.
                   2.  Heat oil in a pan, brown garlic (do not burn), set aside.
                   3.  Cook Beef, make sure not to over cook.
                   4.  When beef is cook, mix in the garlic.
                   5.  Serve with Rice

Filipino Patatim (Pork)

A recipe I tried.  It was cooked by my cousin-in-law.  We make sure to see each other at least twice a month, and we love to share the meals we cook. While the children of course play.

Patatim

Ingredients:  6 lbs Pork Spareribs (I didn't have pata)
                     2 cups 7 up
                     1/4 cup ketchup
                     1/4 cup Oyster Sauce
                     1/4 cup Soysauce
                     1/2 cup water
                     3 Anise
                     2/3 cup Sugar
                     6 cloves garlic, crushed
                     Pepper
                    
Procedure:  Boil pork and the rest of the ingredients till tender, add water if not yet tender. 

                   Mix 3 TBSP of cornstarch to 6 TBSP of water.in a small bowl until you don't see
                   any lumps. 

                  When pork is tender, pour cornstarch mixture, cook until sauce thickens. 

                  You can can add vegetables to this dish, like Napa Cabbage, adding boiled eggs
                  will be great too.
                   

Hamburger Steak (Filipino Style)

My son loves this recipe, one of the first recipes my mom taught me.  I would love to share it....

Hamburger Steak

Ingredients:  4 lbs Ground Beef
                     3 Beaten Eggs
                     2 Soaked Pandesal (Filipino Dinner Roll)
                     Salt and Pepper to season
                     Knorr Seasoning for flavor
                     Worcestershire Sauce for flavor

Procedure:   In a bowl, combine all ingredients.  Let it sit for marinade to absorb, about 30 minutes.
                    Form to patties, then fry.  Set aside.

                    In the same pan, squeeze a whole lemon and add 1/4 cup soy sauce.  Let it cook for
                    at least 5 minutes.  When done,  pour over burgers. 

                   Perfect with rice.
I guess making a weekly menu can be difficult.  There will be days I won't get to be able to cook.  Lets take this one day at a time....

Eating and Cooking - Things I love to do besides taking care of my family.
I enjoying cooking for my family and the best part is having each of those meals with them together.

Having a family and having them to like different food can be so stressful. You need to satisfy each one of them, and because being a mother, you need to make them happy.

It makes me happy when I cook. It even get me really excited when I know my family will enjoy what I have prepared for them.

I decided to create this blog because I want to share the passion and dedication I have when it comes to my family and my cooking.

I know people sometimes find it difficut to come up with recipes/dishes in a snap,  So, what I do, I make myself a weekly menu in order to give me a chance to list down all the recipes and ingredients I will be needing for the week. It really makes it easier on my part.

I would love to share my weekly menu and recipes.  Please follow me, I can also get ideas from you too.
