Potato Soup

I Cooked Potato soup last night.  We were supposed to eat it with a sandwich, but the soup itself would really be filling.  True enough, we were full.

My friend from Canada, you should try this recipe....

Potato Soup

Ingredients:  1 med onion, chopped
                   2 large carrots, cubed
                   3 stalks celery, cubed
                   10 small red potatoes, cubed
                   1 lb ham, cubed
                   olive oil
                   1 pint Heavy Whipping Cream
                   2 chicken breast
                   2 TBSP Chicken broth powder
                   Salt and pepper
                   2 TBSP Cornstarch dissolved in
                   6 TBSP Water

Procedure:  Boil chicken, reserve broth, set aside.
                   Shred chicken set aside.
                  1.  Saute vegetables in oil.
                  2.  Add shredded chicken and ham.
                  3.  Season with pepper and chicken broth powder.
                  4.  Add in potatoes, let it cook for 5 minutes.
                  5.  Add broth and if you think you need to add more water.  Liquid should be
                      a little over the meat and vegetables.
                  6.  Boil till potatoes are very tender.
                  7.  When almost done, reduce to simmer and add cream.
                  8. Taste if soup needs more flavor, if so, add 1 TBSP of chicken broth powder.
                  8.  Add cornstarch mixture to thicken soup or creamy.
